1. Rako's Kickin' Tuna Sandwich
Kind of self-explanatory, right?
Mix tuna and mayo. Add mustard greens in place of lettuce. Put it between bread - Shazam!

I tried feeding some mustard greens to our guinea pig... she wouldn't touch it!! :)
We tried the curried kidney bean/mustard green recipe, and it was pretty good! But the kids would disagree with me.
: ) I bet your guinea pig loves the beet greens though!
